The national cuisine of Thailand marries an assortment of elements from multiple Southeast Asian customs. In Thai cooking, the focus is placed on dishes that are prepared lightly but unite strong, fragrant components. Thai cuisine is widely known for its spiciness. As with other Asian cuisines, balance, detail and variety are very important. Thai cuisine is recognized for its balance of the “basic tastes”: sweet, salty, sour and bitter. Thai cuisine is mostly described as four regional cuisines that coincide with the four main regions of the nation. They all have foods in common or foods that are taken from neighbors. There is also the Thai Royal Cuisine, which dates back to the Ayutthaya Kingdom. Its cooking methods and ingredients had a great impact on the cuisine of the Central Thai region. In the 17th Century, western influence began to make an impression on many dishes. Thai cuisine and culinary traditions have had a big influence on one another over the centuries. Regional variations have a tendency to correlate to their neighbors and share the same cultural background. For example, southern Thai curry often uses coconut milk and fresh turmeric; while northeastern dishes may include lime juice. There are many dishes in Thai cuisine that came from the Chinese and were brought into the culture by the Teochew people. There are also dishes that are derivatives of Indian and Persian cuisine. It was in the 1960’s that Thai cuisine became popular worldwide. Thailand had become one of the premier destinations for travelers across the globe, and it was also the era of the Vietnam War. The war brought more Americans to the region than ever, exposing a new group of people to the cuisine. When dining alone, a Thai meal consists of one dish. Otherwise, rice is served and accompanied by many other dishes and shared amongst everyone. It is routine to serve more dishes than there are people. Thai people traditionally ate with their right hands and did not use tables and chairs. Meals were eaten while sitting on the floor. This is still practiced in traditional homes. Meals are now eaten with a fork and a spoon; however, it is the norm to eat with the hands. The fork is held in the left hand and simply used to guide food into the spoon. Knives are uncommon in Thai homes. Chopsticks are not local to Thailand but are sometimes used to eat noodle dishes. Sauces and condiments are always served at meals. Some dishes are served with whole peppers and raw garlic. Cucumbers are often served with spicy meals to cool the mouth. They are also a popular garnish. Plain rice, sticky rice or Thai rice noodles are also used to counteract the spiciness of many Thai dishes. With more than 40 ethnic groups in its culture, Thai cuisine is quite vast. It consists not only of a wide range of ingredients but also preparation methods. More than anything, Thai cuisine is best known for its passionate use of fresh herbs and spices.
