    Il nostro viaggio è iniziato all'Università di Scienze Gastronomiche di Pollenzo nel 2014, dove ci siamo formati per essere più di semplici food lovers: siamo diventati food specialist con una comprensione critica del mondo sfaccettato della gastronomia.

    Dal lancio del nostro podcast "Juice it Up" nel 2021, ci siamo impegnati a scoprire e condividere le storie degli innovatori che stanno plasmando il presente e il futuro della scena gastronomica mondiale.

    Molte delle storie che raccontiamo hanno qualcosa in comune, nascono a Pollenzo, la nostra alma mater, dimostrando l'impatto diffuso della sua comunità.

    We embrace the tales of the world of gastronomy. At the heart of each ingredient, dish, and glass lies an intricate story waiting to be explored - a narrative of success, culture, and global understanding.

    Our journey began at the University of Gastronomic Sciences of Pollenzo in 2014, where we were groomed to be more than food lovers: we became food specialists with a critical understanding of the multifaceted world of gastronomy.

    Since launching our podcast "Juice it Up" in 2021, we've been committed to uncovering and sharing the stories of innovators who are shaping both the present and future of the global food scene. It’s fascinating how many of these narratives trace back to Pollenzo, our alma mater, proving the widespread impact of its community.

    Welcome to "Juicy Gastronomes," a special series brought forth in collaboration with the University of Gastronomic Sciences of Pollenzo.

    Here, we venture across the globe to bring you stories from fellow gastronomes, illustrating how education from our university empowers us with the tools to critically understand and influence food production, choice, and consumption.

    We interviewed Edie Mukiibi, President of Slow Food International since 2022, following in the footsteps and the vision of founder Carlo Petrini.

    An agronomist, educator, and passionate advocate for food justice, Edie was born into a Ugandan farming family—the same year Slow Food was founded. He’s dedicated his life to making agriculture and food culture a source of dignity and empowerment for people.

    From his early work on the Slow Food Gardens in Uganda to now leading a movement spanning over 2000 local groups worldwide, Edie is reshaping the narrative around food, farming, and the future of our planet.

    Lo abbiamo chiesto a Dauro Zocchi, già responsabile del progetto Arca del Gusto e ora ricercatore scientifico e fondatore di Mindmeal.

    L’Arca del Gusto è un progetto di Slow Food che ha l’obiettivo di raccogliere la denuncia di chi vede i sapori della propria comunità scomparire, portando via un pezzo della cultura e della storia di chi li ha condivisi.

    Dauro ci ha parlato del suo percorso universitario, che passa anche per l’UNISG di Pollenzo, il suo percorso professionale e dei suo viaggi come gastronomo tra ricerca accademica e i suoi viaggi in giro per il mondo.
