現在、お好み焼きは関西風と広島風に大きくわかれます。
関西風は、小麦粉をベースに作った生地に具材を混ぜて鉄板の上で焼き、片側が焼けたらひっくり返します。
広島風は生地だけを薄く焼き、大量のキャベツなどの具を順番に積み重ねていきます。
関西風のお好み焼きは、関西では店の人が作るのが一般的ですが、東京では客が自分で作る店もあります。
具の多い広島風はひっくり返すのが難しいため、店の人が焼いてくれます。
