ちらし寿司には、酢飯の上に具を並べるものと、酢飯と具を混ぜ合わせるものと、2種類あります。
関東地方を中心とする江戸前寿司では、酢飯の上に、にぎり寿司で使用するネタを並べたものをちらし寿司と呼びます。ネタを細かく切って散らした、「ばらちらし」と呼ばれるものもあります。
一方、江戸前のちらし寿司とは異なり、魚介類や野菜など多彩な具を酢飯に混ぜたものが、五目ちらし寿司です。五目寿司やばら寿司などとも呼ばれます。
全国的に、五目ちらし寿司は古くから家庭でも作られており、特に雛祭りの料理としても知られています。©2017 KODANSHA
